You have to try these crispy carrot and potato fries! These fries are so tasty!

Although they are a bit time-consuming, they are easy nonetheless!

Carrot And Potato Fries
Ingredients:
- 4 potatoes, sliced
- 10-15 baby carrots, sliced
- Oil (olive oil, canola oil, or any cooking oil of your choice) Not pictured
- 1 Tbsp Corn starch (for crispy fries)
- Salt and pepper to taste
- Optional spices (such as paprika, garlic powder, onion powder, or herbs like thyme or rosemary)
- Dip of your choice (ketchup, barbecue sauce, aioli, or any other preferred dip)
- Grated cheese (optional, for topping)

Instructions:
- Preheat your air fryer to 400°F (200°C).
- If you haven’t yet, slice your potatoes and carrots into 2-3 inch strips.
- Fill a large bowl with ice & cold water and add the sliced potatoes and carrots. Allow them to soak in the ice bath for 20-30 minutes. This helps remove excess starch and results in crispier fries.
- After the soaking time, drain the water and transfer the potatoes and carrots to a pot of boiling water. Cook them for about 6 minutes to partially soften them.
- Once the potatoes and carrots are boiled, drain them well, add to a sheet pan, and pat them dry using a clean kitchen towel or paper towel. Make sure they are as dry as possible to achieve crispier results.
- Sprinkle corn starch, salt, pepper, and any additional spices you desire, and give them a to ensure they are seasoned well. Drizzle with oil and toss them again gently to coat evenly. You can adjust the amount of oil depending on your preference.
- Now, transfer the seasoned potato and carrot slices to the preheated air fryer basket. Spread them out in a single layer to allow for even cooking.
- Air fry the fries at 400°F (200°C) for about 15 minutes, stirring them occasionally. Cooking times may vary, so keep an eye on them to ensure they don’t overcook or burn.
- Once the fries are golden brown and crispy, remove them from the air fryer and let them cool for a minute or two.
- If desired, sprinkle grated cheese on top of the hot fries and let it melt slightly.
- Serve your delicious potato and carrot fries with your favorite dip on the side, and enjoy!
