Chicken Alfredo From Scratch

Ingredients
- 1 lb Egg Pasta
- 1 Tablespoon of butter
- 4 Cloves of Garlic, grated
- 2 Medium Tomatoes, grated
- 3 Pieces of Chicken Thighs, diced
- 1 Qt of Heavy Whip
- A block of Cheddar Cheese shredded
- 1 teaspoon of Adobo Seasoning
- Salt & pepper, garlic salt
Instructions
- Cook Pasta as instructed on the box- egg pasta takes about 7 minutes
- Season the chicken with salt & pepper and fry in a pan. Fry until fully cooked. Set aside in a bowl.
- Gently fry the grated garlic with butter until golden.
- Add the tomato juice and fry until it starts to turn orange.
- Pour in the heavy cream, add adobe seasoning, and bring to a boil. Turn it off, this will prevent it from curdling up.
- Add cheddar cheese and mix
- Add garlic salt as needed. Stir. (Remember adobo seasoning is salty and so is the cheddar cheese. Taste before adding any garlic salt!)
- Add chicken thighs and pasta. Mix
- Garnish with parsley if desired
- Enjoy
