The poached eggs with tomatoes and onions dish that you will want every day!
If you were to look back into my childhood to see what I had for breakfast the most, you would find this dish. It is similar to the shakshuka dish but without tomato paste or peppers!
This breakfast is an easy way to elevate your eggs and it doesn’t take long, using the simplest ingredients!

Poached Eggs With Tomatoes
Ingredients
- 1 Tablespoon butter or olive oil
- 2 Eggs
- 7 cherry tomatoes diced, (or half a large tomato diced)
- 1/2 of an Onion, diced
- 1 Teaspoon of Garlic Salt
- 1 Teaspoon of red pepper flakes
- Salt & pepper as needed (not pictured)
- Parsley, chopped for garnish (not pictured)
- 2 Slices of bread for dipping
- Feta cheese (optional, not pictured)
Instructions
- On high heat with butter, lightly saute the onion until slightly brown (2-3 min)
- Add tomatoes, season with garlic salt, and let simmer on medium heat with the lid on until tomatoes become slightly orange (2-3 min)
- Add 2 eggs, season with garlic salt, salt & pepper, and red pepper flakes
- Close with lid and turn off the stovetop. Turning off the stovetop lets the eggs poach slowly without overcooking them. Let cook for about 5-7min. (you can check the doneness by lightly shaking the pan- the only part that should move is the yolk area -that means the eggs are done)
- Garnish with parsley and serve with bread. You can also serve it with feta cheese. Enjoy!
