If you are looking for a classic comfort food dish-this hearty Shepherd’s pie is for you! So easy and so good!
I was introduced to this yummy dish by my husband when we were dating and have pretty much been hooked since!
I know there are so many ways that people do this dish but this version is more simplified and homey!
A dish that you and your family will find yourself craving for dinner!
This post is all about the best hearty shepherd’s pie!
Ingredients
- 1 pound of ground beef
- 1 onion, chopped
- 2 cups of mixed vegetables (carrots, peas, corn)
- 1 tablespoon of tomato paste
- 1/2 block of cream cheese, softened
- 4 cups of mashed potatoes (recipe below)
- 1/2 cup of cheddar cheese, shredded
- Salt and pepper to taste
- Olive oil or Butter
Instructions:
1. In a large skillet, heat some olive oil (or butter) over medium heat. Add chopped onions and cook until they become translucent.
2. Add ground beef to the skillet, season, and cook until it’s browned.
3. Add tomato paste and creme cheese. Stir until combined well.
4. Reduce heat to low and add in carrots. Let simmer until carrots are tender.
5. Add corn, mix well, and turn off the stove.
6. Spread the beef mixture into a baking dish.
7. Top the beef mixture with mashed potatoes. Spread the mashed potatoes evenly over the beef mixture.
8. Sprinkle shredded cheddar cheese on top of the mashed potatoes.
9. Broil in the oven until the cheese is melted and the top is golden brown. About 5-6 minutes.
10. Remove from the oven and let it cool for a few minutes before serving.
Mashed Potatoes Ingredients:
- 4 large potatoes, peeled and chopped
- 1/2 cup of half & half
- 1/4 cup of butter
- 2. Tablespoons of ranch (secret ingredient of mine)
- Salt and pepper to taste
Mashed Potatoes Instructions:
- In a large pot, bring the chopped potatoes to a boil in salted water. Cook until the potatoes are tender.
- Drain the potatoes and return them to the pot.
- Add half & half, butter, and ranch to the pot and mash the potatoes until they are smooth and creamy.
- Season with salt and pepper to taste.
