Easy Buckwheat Dinner That You Have To Try

A buckwheat dinner that will blow your mind!

Buckwheat is not a usual dinner but so tasty and so easy to make! Very similar to rice!

This is another dish both my husband and I grew up on and I am excited to share it with you!

This post is all about the best buckwheat dinner!

Buckwheat Dinner

Ingredients

  • 2 tablespoons butter
  • 1 chopped onion
  • 2 medium carrots, grated
  • 3 pieces chicken thighs, diced
  • 1 1/2 cups roasted buckwheat
  • Chopped parsley for garnish
  • Salt and pepper to taste
  • Better than Bouillon (chicken or vegetable)
  • Chili and lime seasoning (adjust according to taste)
  • Smoked paprika (adjust according to taste)
  • Additional spices of your choice (optional)

Instructions:

  1. Heat a large skillet or pan over medium heat. Add the butter and allow it to melt.
  2. Add the chopped onion to the pan and sauté until it becomes translucent and fragrant.
  3. Add the grated carrots to the pan and cook for a few minutes until they start to soften.
  4. Push the onion and carrots to one side of the pan and add the diced chicken thighs to the other side. Cook until the chicken is browned and cooked through.
  5. Season with salt, pepper, chili & lime seasoning, smoked paprika, and any other spices of your choice. Adjust the seasonings according to your taste preferences.
  6. Stir in the roasted buckwheat, ensuring it is well-coated with the flavors in the pan.
  7. Add 3 cups of water and Better than Bouillon into the pan. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for about 15-20 minutes or until the buckwheat is cooked and has absorbed the liquid.
  8. Once the buckwheat is cooked and tender, remove the pan from heat. Let it sit covered for a few minutes to allow the flavors to meld together. Fluff it up and it’s ready to be served.
  9. Serve the one-pan buckwheat dinner hot, garnished with chopped parsley.
