Ingredients
- 2 tablespoons butter
- 1 chopped onion
- 2 medium carrots, grated
- 3 pieces chicken thighs, diced
- 1 1/2 cups roasted buckwheat
- Chopped parsley for garnish
- Salt and pepper to taste
- Better than Bouillon (chicken or vegetable)
- Chili and lime seasoning (adjust according to taste)
- Smoked paprika (adjust according to taste)
- Additional spices of your choice (optional)

Instructions:
- Heat a large skillet or pan over medium heat. Add the butter and allow it to melt.
- Add the chopped onion to the pan and sauté until it becomes translucent and fragrant.
- Add the grated carrots to the pan and cook for a few minutes until they start to soften.
- Push the onion and carrots to one side of the pan and add the diced chicken thighs to the other side. Cook until the chicken is browned and cooked through.
- Season with salt, pepper, chili & lime seasoning, smoked paprika, and any other spices of your choice. Adjust the seasonings according to your taste preferences.
- Stir in the roasted buckwheat, ensuring it is well-coated with the flavors in the pan.
- Add 3 cups of water and Better than Bouillon into the pan. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for about 15-20 minutes or until the buckwheat is cooked and has absorbed the liquid.
- Once the buckwheat is cooked and tender, remove the pan from heat. Let it sit covered for a few minutes to allow the flavors to meld together. Fluff it up and it’s ready to be served.
- Serve the one-pan buckwheat dinner hot, garnished with chopped parsley.
