Chicken Noodle Soup With Potatoes
Ingredients:
- 2 Tablespoons butter
- 1 diced onion
- 3 small shredded carrots
- 3 potatoes, diced
- 2 cups of noodles
- Chopped parsley
- 2-3 tablespoons of Better Than Bouillon seasoning
- Salt, pepper, and other seasonings of your choice
- 6-8 cups of water
Instructions:
- Start by melting the butter in a large pan and frying the onions for about 3 min, then add carrots and chicken thighs. Season with chili lime, red pepper flakes, chicken season, and salt & pepper. This will create a base for the soup and add tons of flavor. Fry for about 10 minutes or until everything is nicely browned and the chicken is fully cooked
- While that’s frying, boil 6-8 cups of water with a tablespoon of onion. Bring to a boil, add the diced potatoes, and then the noodles. Cook until both the potatoes and noodles are tender.
- Add in the Better Than Bouillon seasoning and other seasonings of your choice. I like to use chili lime for a little kick.
- Once the potatoes and noodles are cooked, add the fried base in. You can also use a molcajete bowl to mix together the fried onions with parsley for an extra burst of flavor and add them at this point. (optional)
- Bring everything to a boil and then turn off the heat. Let the soup sit for 5-10 minutes to let the flavors meld together.
- Serve the soup hot and enjoy!
