- 3 slices of salami
- 1/2 of a medium tomato, sliced
- 1/4 cup of shredded cheddar cheese
- Your favorite sauce for topping (optional)
- 1 large egg for the runny egg on top of the crepe

- In a large mixing bowl, whisk together the eggs, sugar, and salt until well combined.
- Add in the flour about 1/3 in and whisk. repeat until all the flour is gone.
- Pour in the milk and whisk slowly until smooth with no bumps.
- Slowly drizzle in the olive oil while continuously whisking the batter.
- Heat a non-stick pan over high heat and ladle a small amount of batter into the pan.
- Tilt the pan to spread the batter evenly and cook until the crepe is golden brown on both sides, about 1 minute per side.
- Repeat with the remaining batter to make 10-15 crepes
